Today’s Parola del Giorno is the noun il lampredotto. This doesn’t have any easy translation from Italian to English, but it is a street food that you will find in Florence. It is typically served as a sandwich, although you often find it in restaurants served in a kind of broth with a green sauce on the and some chopped vegetables. The word lampredotto comes from the Italian word la lampreda (lamprey eel) because the lampredotto looks like the inside of the eel’s mouth. Lampredotto is made from the fourth stomach of the cow, and you will find this interesting bit of street food for sale at the many lampredottai (lampredotto sellers) throughout the city. So what does it taste like? I prefer to eat it in the sandwich because the bread and sauces balance out the strong flavor of the meat. Give it a try the next time you are in Florence: you’ll be pleasantly surprised at how good it can be!
